It takes almost 20 years for a pistachio plant to start producing and cannot be harvested every year. During harvest, farmers select and sort all nuts by hand to remove bitter and molded nuts.

Therefore, availability is poor while demand is high. Pistachio is cheaper than cashew nuts, as standard prices around the world are almost 4 times cheaper than cashew nuts. However, this price difference may change in some countries due to availability and local cultivation. Americans eat nuts primarily as snacks, consuming an average of about 6.3 grams per day of cashew nuts and 3.5 grams of pistachios.

Both nuts are healthy, as is the case with all nuts, which improve overall vitamin and mineral intake. Although pistachios are richer in nutrients and have attracted more research on their benefits, cashew nuts also have their benefits.
